Ahhh, potatoes. Baked, mashed, whipped, sauteed, I love them- but I no longer eat them unless they’re of the orange or sweet potato variety. And while I’ve heard for years that you can in fact create a near potato substitute using the humble cauliflower, I didn’t believe it for a minute. I still don’t, but I did, however, find a way of creating whipped cauliflower using my Instant Pot (or any pressure cooker) that creates the fluffiest, yummiest cauliflower that ever did cauli. It’s also easy-peasy yum and potentially cheesy. Read on for the directions and tips.
1 Large head of Cauliflower
1 Cup or more of water
4 or more pats of butter
1/4 cup milk or soy milk
1 Tbsp. of any type of shredded cheese or cheese substitute
Sea salt to taste
French or Italian herbs to taste
Sour cream or Greek yogurt or substitute
Put into Instant Pot – directly in pot, or use steaming add in accessory
pour one cup of water with a pinch of salt over the cauliflower. Use more water if you like things really steamy soft!
Pressure cook for 7 minutes (or steam to your taste)
Allow to cool
Use stick blender to create as creamy as possible a consistency. Break up pats of butter and allow them to melt into cauliflower. Add milk slowly until consistency is creamy. It will be more liquid than mashed potatoes but will have a similar mouth feel*
Add salt to taste
Sprinkle herbs on top or even a shake of cheese. Serve with sour cream, vegan cream or yogurt.
* Yeah. I went there
